Magic Bean Cake
Ingredients
- 420 g of canned kidney or butter beans, drained and rinsed 
- 1 tbsp of water or coffee 
- 1 tsp of vanilla extract 
- 70 g of cacao powder 
- 1 tsp of baking powder 
- 1/2 tsp of bicarb soda 
- 1/4 tsp of salt 
- 125 g of butter 
- 5 eggs 
- 140 g of rapadura or coconut sugar 
Method
- Preheat oven to 180°. 
- Puree the beans, water/coffee, 1 egg and vanilla until smooth (Thermomix speed 7). Set aside. 
- Beat the butter and sugar (Thermomix speed 5 for 30 seconds). 
- Add the remaining eggs & beat for 20 seconds (Thermomix speed 4). 
- Mix through bean mixture (Thermomix speed 4 for 5 seconds). 
- Add the cocao powder, baking powder, baking soda, and salt and blend (Thermomix speed 4 for 10 seconds). 
- Pour batter into a lined tin pan and bake for 30 minutes or until a toothpick inserted in the middle comes out clean.
