Life-Changing Bread

Ingredients

  • 1 cup (135 g) of sunflower seeds

  • ½ cup (90 g) of flax seeds

  • ½ cup (65 g) of hazelnuts or almonds

  • 1½ cups (145 g) of rolled oats

  • 2 tbsp of chia seeds

  • 4 tbsp of psyllium seed husks (3 tbsp if using psyllium husk powder)

  • 1 tsp of fine grain sea salt

  • 1 tbsp of maple syrup

  • 3 tbsp of melted coconut oil or ghee

  • 1½ cups of water

 

Method

  • Combine all the dry ingredients and mix well.

  • Mix maple syrup, oil and water together, then add this to the dry ingredients. Mix thoroughly until the dough becomes quite thick, but still able to be stirred.

  • Smooth out the mixture with the back of a spoon, and allow it to sit for a minimum of 2 hours, or overnight if you can.

  • Preheat oven to 175° C. Bake the bread in a loaf pan for 20 minutes. Then remove it from the loaf pan and bake for another 30 to 40 minutes, until it sounds hollow when tapped.

  • Let it cool completely before slicing. Enjoy!
