Carrot Cake

Ingredients

  • 3 cups of blanched almond meal

  • ½ tsp of sea salt

  • 1 tsp of baking soda

  • ¼ tsp of baking powder

  • 1 tbsp of cinnamon

  • 5 eggs

  • ½ cup of honey

  • ½ cup of coconut oil

  • 3 cups of grated carrots

 

Method

  • Pre-heat oven to 180°.

  • In a small bowl combine almond meal, spices and other dry ingredients. Set aside.

  • In a separate bowl mix the eggs until creamy. Then add the honey and oil, blending until everything is nicely combined.

  • Combine wet and dry mixtures, and mix through.

  • Add the carrots and mix through.

  • Pour batter into 2 round pre-oiled cake pans.

  • Bake for 25 to 35 minutes, depending on your oven. A skewer will come out clean from the middle of the cakes when done.

  • Frost with cream cheese frosting (optional)
