Carrot Cake
Ingredients
- 3 cups of blanched almond meal 
- ½ tsp of sea salt 
- 1 tsp of baking soda 
- ¼ tsp of baking powder 
- 1 tbsp of cinnamon 
- 5 eggs 
- ½ cup of honey 
- ½ cup of coconut oil 
- 3 cups of grated carrots 
Method
- Pre-heat oven to 180°. 
- In a small bowl combine almond meal, spices and other dry ingredients. Set aside. 
- In a separate bowl mix the eggs until creamy. Then add the honey and oil, blending until everything is nicely combined. 
- Combine wet and dry mixtures, and mix through. 
- Add the carrots and mix through. 
- Pour batter into 2 round pre-oiled cake pans. 
- Bake for 25 to 35 minutes, depending on your oven. A skewer will come out clean from the middle of the cakes when done.
